Healthy Happy Granola

Granola is a healthy food that can be enjoyed anytime of the day. This recipe I created a few years ago when I became unsatisfied by the store-bought granola. I set out to create a granola that is nutritious, moist, yet still has a crunch. It took a few attempts to perfect this recipe. This recipe is the best granola to date. My family and friends are usually my taste testers. They claim that this is the best granola they have ever had.

I add dried cranberries and organic raisins to my granola, but if you want to eliminate the fruit, I sure it's just as delicious without as with the fruit. I sure you will enjoy it as much as I do.

Healthy Happy Granola


8 cups gluten-free quick oats

2 cups sliced almonds

2 cups raw pumpkin seeds, shelled

1/2 cup coconut sugar

1 tbsp cinnamon

1 cup coconut oil, melted

1/2 cup unpasterized liquid honey

1/2 cup maple syrup

1 tbsp pure vanilla extract

1 cup dried unsweetened cranberries

1 cup organic raisins


1/ Preheat oven to 350 degrees Fahrenheit.

2/ Line large baking sheet with parchment paper.

3/ In a large bowl, place the quick oats, sliced almonds, pumpkin seeds, coconut sugar, and cinnamon. Mix well.

4/ In a pot, melt coconut oil, just until melted, do not cook.

5/ Once melted place in a medium-sized bowl, add honey, maple syrup & vanilla. Mix well.

6/ Add coconut oil mixture to Oat mixture and mix well until thoroughly blended.

7/ Spread mixture onto prepared baking sheet and place in preheated oven. Bake for 30 minutes or until golden brown, stirring every 10 minutes.

8/ When golden brown, remove from oven and add dried cranberries and raisins. Blend well and let cool.

9/ When completely cool, place in mason jars or air-tight containers. Makes approximately 10 cups of granola.

10/ Serve with bananas, berries, almond milk or yogurt. Or just enjoy with a spoon out of the jar dry. Enjoy.
